TOM WOOD - IVORY SPIKE-(Zingiber eborinum)-A new species from Borneo that is compact (2-3 feet tall) which produces
numerous 4" spikes that are creamy, ivory colored with gold flowers. These spikes turn pink and persist for a month after
flowering ceases. It grows well in shade and so far is known to be hardy in Zones 9 and 10.

first Western botanists to visit Japan. His comprehensive Flora Japonica was published in 1784, and referred to this
species - which he first described a year earlier - as Amomum mioga. Roscoe renamed it in 1807.) The young shoots are a
delicacy in Japan (when pickled and dyed red they are known as hajikomi shoga).

PLANT DELIGHTS - from the collection of famed Japanese variegation guru, Dr. Yokoi, 2 ft stalks of green leaves each
highlighted with a stunning central white "lightening" pattern. Edible flowers and new shoots. Multiplies rapidly, making
nice tight patch, small light yellow orchid-like flowers in fall.
Frank Galloway - Is the variegated form of Zingiber mioga 'Dancing Crane' the same plant that
Glasshouse Works is selling. Apparently, there are two var. forms of mioga. I don't know which is which. From what I
understand Glasshouse got their original plant from Barry Yingerand were not supposed to release it without Barry's approval
as he is the person who first brought it to the US. Anyway, Glasshouse released it (thank God) and Barry was upset. The
var. mioga is a superb foliage plant and I hope just as aggresive as
its solid green relatives. Straight mioga, here in Carolina can become almost weedy. Pretty weed although. Thousands of
yellow crocus like blooms at ground level in late summer.

TOM WOOD - A tall plant (6') for a shady location that has long, separate, bright red spikes that can be a foot
long. In the translucent, red bracts small, purple flowers appear. Unlike other Zingibers, it shows color early and thus
makes a good cut flower. It is hardy to zone 8.
ALOHA TROPICALS - A total knockout! Inflorescences almost seems that it was sculptured, bract tips are ruby red with
lime green translucent bases emerging from it's cup like bracts and small purple flowers that peek out intermittently.
Makes a excellent cut flower lasting several weeks at a time. Grows 5' to 7' in partial sun. A real conversation piece for
the tropical garden!

Europe, however, it is not common, although it had been an important spice in Roman times (see silphion for more information
about the taste of ancient Rome). Fresh ginger (also called green ginger) is now easily available in Western countries.
Many people like raw ginger, and this is the form most popular in South East Asia:
Fresh ginger is grated or finely chopped, optionally soaked in water for several hours, and then added to the dish not long
before serving. This kind of usage will result in a fresh, spicy and pungent taste (please see sichuan pepper for a list of
hot and pungent spices). If fresh ginger is cooked, it will increase in pungency but decrease in freshness. Thais add grated
ginger together with many other ingredients (in the the form of curry pastes) to their creamy coconut milk curries.
Indonesians frequently use spice pastes based on fresh chiles and ginger to rub meat before grilling or baking (see lemon
grass for a general discussion and lesser galangale for an example). Ginger tea, prepared by cooking slices of fresh ginger
for a few minutes, is a spicy and healthy drink enjoyed in hot tropic climates (Indonesia), but also in the chill Himalayas
(Sikkim).
Totally different is the flavour of fried ginger (preferred in India and Sri Lanka): If
chopped ginger is fried (typically, together with garlic or onion), the hot and spicy taste gives way to a mild, rich
flavour (see ajwain). Especially Northern Indian recipes make much use of this technique as the basis for delicious sauces
to vegetable or meat dishes.
In Chinese cookery, fresh ginger is both used boiled and fried. Food that needs a long simmering time is often flavoured
with slices of ginger, because the slices release their flavour quite slowly (see orange for an example and see also cassia
on Chinese master sauces). On the other hand, stir-fries (food rapidly cooked in very hot oil, with constant stirring)
normally call for finely cut, chopped or even grated ginger.
A great and well-known recipe of the latter kind is gung bao, also spelled kung pao: Cut chicken breasts are marinated in a
thick mixture of egg white, soy sauce, rice wine and corn starch, which both acts as a marinade and provides a soft coating
after frying. Dried red chiles are then fried in very hot oil until almost black; than, chopped ginger, garlic and the
chicken pieces are tossed in. The meat is tender within a few minutes; after adding some hot bean paste and peanuts, the
dish is ready to serve. With its liberal usage of chiles and fresh ginger, gung bao very well illustrates the cuisine of
Sichuan,China's most spicy cooking style.

David A. Sizemore - I've been growing Zingiber zerumbet here in NE Tennessee (Zone 6a) for
about seven years now. Of course it's not hardy here but does make for an outstanding foliage plant for a large container.
The biggest problem with it is the relatively short growing season that we have here. Not that it's all that short but
that these plants require a least one month of 75øF temps just to break dormancy and even though it begins to warm here in
April, (last frost date May 10th) we get quite cool night temps (low 40'søF) all the way into early June when it then jumps
into 80øF to
90øF days and 70øF+ nights all at once. So in reality, you get about three to four
months of growing time before you have to bring them in for the winter. One thing
that I do like is that they will readily go dormant for the winter just by withholding water and do just fine in my unheated
basement until the following spring.
GAINESVILLE TREE FARM - Stalked infls. from ground level w/red bracts and yellow fls
SOUTHERN PERENNIALS - Pretty plants, with an arching habit, and shiny, dark green leaves. Height 6' or more. Flowers
sprout from the base of the plants on a separate stalk, to 18" tall. Flowers are yellow and protrude from a green cone,
which slowly changes to bright red over the course of several weeks. Give the cone a squeeze, and you'll discover the source
of the common name. Zones 8-11.
STOKES TROPICALS - Commonly called "shampoo" ginger. Plant grows 6' - 8' in medium sun. Large green cone
inflorescences are produced from mid-summer to fall. Small yellow flowers appears from under bracts of green cone. After
blooming, cone turns brilliant red and lasts for 2 - 3 weeks. Cones make excellent cut flowers. Hardy in Zone 8 and higher.
ALOHA TROPICALS - This species is the common "Shampoo Ginger" It is used to make both Paul Mitchell and Freeman's
shampoo. Its common name in Hawaii is "Awapuhi" and produces a large green cone bract in mid summer, after blooming its
bract begins turning scarlet red working its way up the cone and last for weeks. The bract resembles a pine cone which
releases a thick sudsy juice when squeezed with a very gingerly scent, and can also be used as an unusual cut flower for
arrangements. Grows 5' to 7' in medium sun.
